Ruth Biscuits

Named after their creator, a family friend and my childhood babysitter, these biscuits are basic but so moreish. They are great for get togethers as they take little time to bake and are good for sharing. The recipe is also perfect for customizing, add the zest of an orange and dip in chocolate once baked and you have a chocolate orange biscuit – it’s as simple as that.

Makes: Roughly 18

Ingredients:

  • 8oz/227g self-raising flour
  • 4oz/113g sugar
  • ½ tsp salt
  • 6oz/170g margarine

Method:

  1. Heat the oven to 325º F/175º C
  2. Put all of the dry ingredients in a bowl and mix
  3. Rub in the margarine with your fingertips. Once it is a breadcrumb-like texture, continue to mix together until it forms a dough. Stop mixing as soon as it comes together, you don’t want to over knead.
  4. Split the dough in half. On a lightly floured surface roll one half of the dough into a log, the width of the log will decide the size of the biscuit.
  5. Once rolled, using a sharp knife, cut the biscuits from the log, roughly 1 cm thickness, and place them on a parchment covered baking tray roughly 5cm apart.
  6. Repeat with the second log.
  7. Bake in the for 10-12 minutes, keeping an eye on them. You want them to have a little colour on the edges but only just. Once baked let them cool on the baking tray for 5 mins before moving to a wire rack to cool.
  8. Enjoy!!
