Lizzie Brooker’s Tomato Eggs

This recipe is inspired by multiple traditional dishes such as huevos rancheros and shakshuka, but it strays so far from both that I felt it would be disrespectful to call it either of those, so it will simply be tomato eggs. This is a favourite recipe of mine as it is hearty and delicious but also feels healthy. I also particularly enjoy it because the leftovers are just as good as when freshly made, and it can be eaten for dinner or breakfast. The ingredients are budget-friendly, especially as the spices rarely need to be restocked, and are available in most grocery shops.

Time needed: 1hour 30 mins

Ingredients

  • 45g of chorizo (or a protein of your choice)
  • 1 small brown onion
  • 1 clove of garlic
  • ½ red bell pepper
  • ½ tbsp olive/vegetable oil
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp paprika
  • ½ tbsp tomato puree
  • A tin of chopped tomatoes (400g)
  • Salt and pepper for seasoning
  • 2 eggs
  • Bread to serve

Method

  1. Roughly chop the chorizo
  2. Peel and thinly slice the onion
  3. Peel and finely chop the garlic clove
  4. Deseed and thinly slice the bell pepper

5. Add the olive oil to a small saucepan and heat. Add the chorizo and fry on a medium-high heat until it starts to crisp

6. Turn the heat to medium-low and add the onion and red pepper. Put the lid on the saucepan and cook for 10 mins, stirring occasionally, until the veg is soft

7. Add the garlic and cook until fragrant

8. Add the ground cumin, ground coriander and paprika and cook for 2 minutes

9. Add the tomato puree and cook until it turns a deep red

10. Add the tin of chopped tomatoes and bring the mixture to a simmer. Once simmering, leave the pot partially covered and cook for 30 minutes, stirring occasionally, until the water content has reduced

11. Once reduced, season to taste with salt and pepper, then create two dents in the mixture and crack an egg into each one. Cover the pot and cook for 4-6 mins until the white is cooked but the yolk isn’t; if you prefer a solid yolk, you can cook it for longer

12. Serve with some bread and butter (I like it with some mayonnaise). Enjoy!
